THYME Cafe & Brunch, which has earned Michelin Bib Gourmand recognition, brings Northern Thai halal cooking traditions to the islandโ€™s heritage district, replicating the success of Sanaeโ€™s original Chiang Mai location on the Ping River. Located in central Phuket Old Town, approximately 200 metres from the Chartered Bank Building, THYMEย  is not far from the famous On On Hotel. The venue serves as a dual-concept space where Thyme handles cafรฉ service and brunch, whilst Sanae focuses on traditional Thai dishes. Both operate under complete halal certification with no alcohol permitted.

The restaurant presents an interesting contrast between appearance and atmosphere. Blending modern, vintage, and mid-century design elements, the interior features contemporary styling that might suggest formal dining. Yet the restaurant maintains a relaxed, approachable character that belies its polished look. Visitors find the space more casual than the refined decor implies, making it comfortable for everyday meals rather than special occasions only.

The menu centres heavily on beef preparations, reflecting Sanaeโ€™s specialisation. Beef Fat Fried Rice remains the signature offeringโ€”jasmine rice cooked in halal wagyu beef fat, topped with seared steak and cured egg yolk. The dish carries smoky flavours and balanced seasoning that earned praise from Michelin inspectors.

Additional highlights include Khao Soi (Northern Thai curry with crispy and soft noodles), Braised Marrow Beef Balls, and Spicy Beef Rib Soup served in a large hot pot with substantial rib portions.

The restaurant also offers Southern Thai selections, including Sea Bass in Sour Curry, Massaman Chicken Curry with Roti, and Tom Kha Gai (chicken in coconut galangal soup). Drinks include Southern Thai tea topped with coconut ice cream, served with a small mortar for pounding peanuts, and Karikee Coffee, described as a unique Arabica variety.
