Chef Gautam’s two-decade journey across eleven countries finds its natural conclusion at Ember Steakhouse in Bangtao. With a wood-fired kitchen below and a rooftop open to the Andaman Sea, Ember is defined by elemental contrasts: smoke and salt air, fire and breeze.
Downstairs, the space feels grounded and deliberate — flame-resistant finishes, leather seating and low light framing the table rather than competing with it. Upstairs, the rooftop opens wide to the horizon. Sea air moves freely, carrying hints of oak and charcoal, creating an atmosphere that feels effortless rather than theatrical.
The menu follows the same philosophy. Flambadou oysters sharpen brine and sweetness with a flash of fire. Beef tartare gains depth from ponzu and truffle, while Hokkaido scallops sit atop miso-salted corn purée, balancing sweet and savoury. Charcoal-kissed lamb is cooled with mint yoghurt; smoked salmon is lifted by jalapeño heat and citrus caviar.
Steaks are the anchor: Australian wagyu rib eye, rich and silky; Angus tenderloin, clean and muscular; and Japanese A5, so delicate it dissolves on contact. Fire is used with restraint, revealing character rather than overpowering it.
Cocktails echo the kitchen’s confidence, from an oak-scented Negroni to a deeply savoury Dirty Umami. Ember leaves its mark quietly — smoke, precision, and the steady pull of the sea breeze.”
